2023, A Year of Flavor

A reflection of 2023 shows that it has been a year of culinary advancement for the kitchen team and most importantly the Chef’s here at SPSC. In the prior year, the Chefs were restricted to specific meal delivery days. This year we sought to provide more hours for the Chefs to cross over, allowing them much more time to work together. The focus of this time allowed them to share ideas, train each other in their different approaches and techniques, and bridge the overall kitchen management. With this in place, we set goals to raise the bar of our dining experience and engage our Chefs more creatively to push learning of new beautiful plating and robust flavors.

In addition, the Chefs worked with our kitchen support team member Hang in menu creation and the execution for her first dinner where she was the head Chef!  This required Hang to plan, test, and scale a recipe to meet the challenge of a 60 person dinner!

2023 has truly been a showcase of these evolved skills.   Some of the highlights of the year for me have been:

Greek Chicken and Confit potato

 

Oregano Braised Pork with Lemon Orzo

 

Apple brandy Chicken

 

Thanksgiving Dinner – Turkey, Stuffing and Potato Pie

To close out the year’s work, our chefs put together a 4-course holiday meal. This “capstone” meal will showcase the efforts and growth among our team over the year, as well as being a wonderful treat for our seniors. Since the holiday meal will take place  after I have penned this article, I will look forward to updating you about how the evening turned out in our next newsletter!
